The 2022 Prosecco col fondo has a persistent bead and is full of savoury aromatics, with brioche and pastry accompanied by fresh cream and tropical aromas on the nose. The palate is driven with citrus notes of grapefruit, lemon rind and a hint of lemon bitterness rounding to a fullness of biscuit dough, lemon tart and a hint of bruised red apple. With age, the alluring yeast autolysis character slowly deepens, making it a wonderful prosecco for the cellar (believe us that is not an oxymoron!). And with production increased to 150 dozen we’re looking forward to sharing this sparkling at Cellar Door and in the trade.

Serve very cold (with a plate of rich proscuitto San Daniele) and turn the bottle to well integrate the lees that have settled at the bottom of the bottle. Unlike most prosecco, the col fondo benefits from further ageing as the toasty brioche character will continue to develop.
