The 2016 Prosecco possesses an alluring nose of ripe pear, fresh green apple with subtle notes of lemon pith and florals. A touch drier then previous vintages, the palate is at first dominated by the crisp acidity of zesty lemon, followed by nutty flavours and a yeasty complexity, a rich mouth-feel derived from the addition of 1.25% Pinot bianco that concludes with a hint of bitterness and saltiness. The long, dry and mouthwatering finish cries out for the prosecco to be enjoyed with a plate of cured meats and antipasti. Cin cin!
